Big soup

What do you do if it’s about that time and you have a packet of minestrone, the remnants of a concasse of courgettes, peppers, onions and a few other veg, you’ve just bought some mince and have beans and a few other things to throw in? Plus some Polish sour cream?
Plus you couldn’t be bothered cooking?
Big soup of course.
This is what makes winter so wonderful. Slow simmer, put half away for tomorrow, tear off a chunk of bread and I can’t see what else one needs except maybe a red wine and a cappuccino and dark choc for later.

That would be my problem, especially if it also applies to the red wine… and the dark choc.
It all sounds delicious
I am all for a lazy can’t be bothered dinner option, especially after a day at work!
Soup is one of my ways of getting rid of leftovers in the ‘fridge.
